Cooking Chronicles: Fish Tacos

It’s 60 degrees and beautiful here, and I wanted to make something light and yummy…FISH TACOS seemed like an amazing idea. Fish tacos are the light, airy food of the taco world.


1/2 onion chopped

1 cup of chopped cilantro

1 cup of chopped red pepper

1 cup of corn

1 cup of chopped tomatoes

1 lime

2 tilapia filets

corn tortillas

avocado sliced

sour cream

1. Mix the corn, cilantro, tomato, half of the onions, and half of the red pepper. Squeeze the juice of a lime into the mix. Stir and let sit.

2. In a frying pan, cook the remaining onions and red pepper in a bit of olive oil. After 3-5 minutes, add the fish chunks to the mix. Cook until fish is done and flaking.

3. In a DRY frying pan, heat pan to high heat. Place the corn tortilla in the pan for 10-15 seconds per side (for flexibility).

4. Spoon in fish mix and corn salsa onto a corn tortilla. Add a couple pieces of avocado and top with sour cream.

This turned out DELICIOUS!!!!! It was exactly what I was looking for–fresh, filling, and fun. Mark gives them his seal of approval!
