Mahi Mahi and Israeli Cous Cous

Keeping with the repetition….yum, yum! I picked up some marinated mahi mahi at Trader Joe’s a while back and decided to cook it this evening. The fish was marinated with lemon juice, garlic, cayne pepper, and other yummy stuff. I am so in love with TJ’s Israeli cous cous, I decided to pair the two up.


1/2 onion chopped

2 tablespoons of butter

1 package of TJ’s Israeli cous cous

1 cup of frozen peas

21 spices

2 cups of chicken stock

1 package of TJ’s Mahi Mahi

1. Melt butter in a sauce pan. Add onions and cook until soft.

2. Add cous cous and cooking for a few minutes, until browned.

3. Add spices to taste, peas, and chicken broth. Heat until boiling, turn heat to low and cook until liquid is gone and cous cous is cooked.

4. In a frying pan, cook mahi mahi in the marinate provided for about 5 minutes on each side.

I was worried about this, because the fish smelled a little too fishy while cooking. However, it turned out great! I am in love with this Israeli cous cous, it’s bigger than traditional cous cous. It’s almost like little pasta balls! I managed to match the flavors pretty well. Mark had 2nds, so it couldn’t have been too bad!
