Green Pea Soup

I love peas. Canned peas, frozen peas, fresh peas, sugar snap peas….I loved little round green veggies. Part of eating well on a budget is being sure to eat seasonal. Peas are a spring vegetable. I didn’t find fresh peas at Trader Joe’s, so I substituted frozen peas for this recipe.

Green Pea Soup


1 onion diced

2 potatoes, peeled and chopped

3.5 cups of water

salt to taste

4 cups of peas


1. In a little olive oil, saute the onion until soft, in a large saucepan for about 10 minutes.

2. Add the potatoes, water, and salt to the onions. Cook until the potatoes are done, about 15 minutes.

3. Add the peas, cook until boiling, and peas are done.

4. Blend the soup mix.

This soup turned out yummy, and perfect for a spring day! It was nice and hearty, with very subtle flavors. It’s perfect with a dollop of plain yogurt. Best of all, it was amazingly easy to make. 

This was a pretty cheap meal:

1 onion ~$.60

2 potatoes ~$.40

1 bag of frozen peas $1.99

Total: $2.99

Pretty hearty meal for less than $3.oo! Plus, it’s all organic, with fresh (errr and frozen) ingredients.
