Garlic Potato Salad

On Sunday, I bought a big bag of potatoes. I figured that a potato salad would be a nice lunch option for the warm days we’ve been having. I’m not a fan of potato salad with mayonnaise or mustard, so I am always looking for delicious alternatives.

Unfortunately, I made this salad and ran, and I never got the chance to take a picture.

Ingredients: 

6 cups of potatoes chopped

4 cloves of garlic

1 cup of green onions chopped

1/4 cup of olive oil

2 tablespoons of balsamic vinegar

1 teaspoon of rosemary

salt and pepper

Instructions:

1. Boil the potatoes until they are tender.

2. Mix the remaining ingredients together. Combine in a serving dish with the potatoes.

The salad was pretty yummy. The vinaigrette was a little bland for my taste though. I think I will modify over the summer, to give it a little more bit.

Cost:

1/2 bag of potatoes ~ $1.75

1/2 garlic clove ~$.40

1/2 pack of green onions ~ $.60

Total ~$2.75
