Spinach Linguine & White Clam Sauce

I’ve been craving all kinds of seafood, and as I mentioned in the previous post…I am all about the pasta! As opposed to a tomato or cream based sauce, the white clam sauce was light (though absolutely fattening, I’m sure). It turned out great, and I loved the extra punch that the spinach linguine provided.

Spinach Linguine with White Clam Sauce

Ingredients:

1 package of trader joe’s spinach linguine

2 cans of clams, diced

1/4 cup of butter

1/2 cup of olive oil

4 cloves of garlic minced

1/2 cup of chicken broth

fresh basil leaves

pepper to taste

1. Prepare pasta according to the package directions

2. Add the clams, butter, olive oil, garlic, broth, pepper, and basil to a sauce pan, heat until boiling.

Did I mention that it is ridiculously easy to make as well? I really liked this dish, it was a hot meal that I can stomach on a hot day…which is pretty rare for me! I was pretty impressed with the canned clams, I think I will have to experiment with them more.

Package of pasta $1.99

2 cans of clams $3.98

1/2 cup of broth ~$.75

Total $6.72
