I’m going to toot my own horn here– I am a freaking genius. I had some edamame in the freezer, and I wanted to do something different with them. I found this recipe on Pinterest and I was drooling. However, I did not have any breadcrumbs handy. What’s a girl to do? Then, an idea popped into my head–rolled oats. But rolled oats are chunky, Rachael. Not when they are put in the blender! So that’s what I did. I substituted the recipe’s call for 1/2 of breadcrumbs with 1/2 cup of blended rolled oats (oat flour?). It tasted amazing.
My posts this week should be interesting. The only new food coming into my house is from my weekly CSA box. I didn’t go grocery shopping on Friday, and I want to try to clean out the fridge, freezer, and pantry.
